Ingredients

The cookie dough

  • 2 ¼ cups all-purpose flour
  • 1 ½ teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter
  • ¾ cup packed brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • 1 ¼ cups mini semi-sweet chocolate chips

The filling

  • 3 cups vanilla ice cream
  • 1 cup mini chocolate chips or sprinkles or finely chopped nuts

Instructions

  1. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. Whisk together flour, cornstarch, baking soda, and salt in a bowl.
  3. In a separate bowl, beat butter, brown sugar, and granulated sugar until creamy.
  4. Add the egg, egg yolk, and vanilla extract, mixing until combined.
  5. Gradually mix in the dry ingredients, then fold in the chocolate chips.
  6. Scoop cookie dough onto baking sheets and bake for 12-13 minutes until lightly browned.
  7. Cool cookies on a wire rack before assembling the sandwiches.
  8. For assembly, place a scoop of ice cream on a cookie, top with another cookie, and gently press together.
  9. Roll the edges in mini chocolate chips, sprinkles, or nuts if desired.
  10. Wrap each sandwich and freeze for at least 3 hours before serving.
