Instructions
- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- Whisk together flour, cornstarch, baking soda, and salt in a bowl.
- In a separate bowl, beat butter, brown sugar, and granulated sugar until creamy.
- Add the egg, egg yolk, and vanilla extract, mixing until combined.
- Gradually mix in the dry ingredients, then fold in the chocolate chips.
- Scoop cookie dough onto baking sheets and bake for 12-13 minutes until lightly browned.
- Cool cookies on a wire rack before assembling the sandwiches.
- For assembly, place a scoop of ice cream on a cookie, top with another cookie, and gently press together.
- Roll the edges in mini chocolate chips, sprinkles, or nuts if desired.
- Wrap each sandwich and freeze for at least 3 hours before serving.
