The ice cream

ice cream, frozen yogurt, sherbet, or sorbet
Instructions
- Preheat the oven to 300°F.
- Cream together butter, granulated sugar, and brown sugar in a mixer for about 2 minutes.
- Add eggs, vanilla, and lemon juice, mixing on low for 30 seconds, then medium for 2 minutes until fluffy.
- With the mixer on low, add flour, oats, baking soda, salt, and cinnamon, blending for 45 seconds.
- Stir in chocolate chips and walnuts.
- Scoop dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
- Bake for 20 to 23 minutes until golden brown and soft in the center, then cool for 1 hour.
- For each sandwich, place a scoop of ice cream between two cookies and press gently.
- Optionally, roll the edges in chocolate chips.
