Ingredients

The cookie bars

  • 2 1/8 cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 12 tablespoons butter, melted and cooled to room temperature
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 2 cups chocolate chips
  • to taste sea salt for sprinkling

The ice cream layer

  • 1.5 quarts chocolate chip cookie dough ice cream, softened
  • cup chocolate chips
  • to taste hot fudge sauce for serving

Instructions

  1. Preheat the oven to 325°F and prepare a 9x13-inch baking pan with nonstick spray.
  2. In a medium bowl, whisk together the flour, salt, and baking soda.
  3. In a stand mixer, combine melted butter and sugars until mixed, then add the egg, egg yolk, and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture and mix until combined, then stir in the chocolate chips.
  5. Spread the cookie dough evenly in the prepared pan and sprinkle lightly with sea salt if desired.
  6. Bake for 25-30 minutes until golden brown and edges pull away from the pan, then cool completely.
  7. Once cooled, spread the softened ice cream over the cookie bars and garnish with chocolate chips.
  8. Cover and freeze for at least 2 hours until the ice cream hardens.
  9. To serve, run a knife under hot water and cut the bars into squares, drizzling with hot fudge if desired.
