Instructions
- Preheat the oven to 325°F and prepare a 9x13-inch baking pan with nonstick spray.
- In a medium bowl, whisk together the flour, salt, and baking soda.
- In a stand mixer, combine melted butter and sugars until mixed, then add the egg, egg yolk, and vanilla extract.
- Gradually add the dry ingredients to the wet mixture and mix until combined, then stir in the chocolate chips.
- Spread the cookie dough evenly in the prepared pan and sprinkle lightly with sea salt if desired.
- Bake for 25-30 minutes until golden brown and edges pull away from the pan, then cool completely.
- Once cooled, spread the softened ice cream over the cookie bars and garnish with chocolate chips.
- Cover and freeze for at least 2 hours until the ice cream hardens.
- To serve, run a knife under hot water and cut the bars into squares, drizzling with hot fudge if desired.
