Ingredients

The breakfast cakes

  • ¼ cup butter
  • ¼ cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cup light sour cream
  • cup flour
  • 2 tablespoons flaxseed meal
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • ½ cup dried strawberries, sliced into small pieces

The strawberry sauce

  • ¼ cup sugar
  • 1 cup fresh or frozen strawberries
  • 1 tablespoon cream, milk, etc.

Instructions

  1. Preheat the oven to 350°F.
  2. Cream together the butter and sugar until light and fluffy, then add the egg and mix well.
  3. Stir in the vanilla extract and sour cream.
  4. Mix the dry ingredients together and add to the batter, mixing until just combined.
  5. Fold in the sliced dried strawberries.
  6. Spray 2-3 ramekins with non-stick spray and divide the batter among them.
  7. Bake for 30-35 minutes until golden.
  8. For the strawberry sauce, puree the strawberries and sugar in a food processor, adding cream and blending again.
