Fresh Strawberry Cake

Ingredients

The cake

  • 3 cups cake flour
  • 1 Tbsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • cups granulated sugar
  • 3 large eggs
  • 2 large egg yolks
  • cups milk
  • 2 tsp vanilla extract

The frosting

  • 3 cups heavy cream
  • 1 cup powdered sugar, divided
  • 8 oz cream cheese
  • ½ tsp vanilla extract
  • lbs fresh strawberries, hulled and sliced
  • optional sliced strawberries for decorating

Instructions

  1. Preheat the oven to 350°F and prepare the cake pans.
  2. Sift the cake flour and whisk together with baking powder and salt.
  3. Cream together the butter and sugar until pale and fluffy using an electric mixer.
  4. Add the eggs and egg yolks one at a time, mixing in the vanilla with the last yolk.
  5. Alternate adding the flour mixture and milk to the butter mixture until combined.
  6. Divide the batter among the prepared cake pans and bake for 25-30 minutes.
  7. Let the cakes cool in the pans for 5 minutes, then transfer to wire racks to cool completely.
  8. For the frosting, whip the heavy cream until soft peaks form, then add powdered sugar and whip until stiff peaks form.
  9. In another bowl, whip the cream cheese until smooth, then mix in the remaining powdered sugar and vanilla.
  10. Fold the whipped cream into the cream cheese mixture along with the strawberries.
  11. Once the cake is cool, frost with the strawberry cream cheese whipped cream.
