Ingredients

The salad

  • 1 cup orzo
  • ¼ cup black olives
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ¼ cup red onion, diced
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

The protein

  • 4 large hard boiled eggs
  • 8 oz fresh mozzarella

Instructions

  1. Cook the orzo according to package instructions and let it cool.
  2. In a large bowl, combine the cooked orzo with olives, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the salad and mix well to combine.
  5. Slice the hard boiled eggs and mozzarella.
  6. Divide the salad into meal prep containers and top with egg and mozzarella slices.
