Caprese Orzo Salad

Ingredients

The salad

  • 8 oz uncooked orzo
  • 2 tbsp olive oil
  • 2 pints cherry tomatoes, sliced in half
  • 3 cloves garlic, minced
  • 8 oz mozzarella balls, sliced in half
  • 1 cup fresh basil leaves, sliced into ribbons
  • ½ cup pine nuts

The dressing

  • cup olive oil
  • ¼ cup balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder

For topping

  • to taste grated parmesan cheese

Instructions

  1. Cook the orzo according to the package instructions and set aside to cool.
  2. Heat a sauté pan over medium heat, add olive oil, then add tomatoes and garlic, cooking until the tomatoes blister and soften.
  3. In a glass measuring cup, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, pepper, and garlic powder to make the dressing.
  4. Combine the orzo with the sautéed tomatoes and garlic, then add mozzarella, basil, and pine nuts.
  5. Pour the dressing over the salad and mix well.
  6. Top with grated parmesan cheese and additional basil if desired.
