Ingredients

The pasta

  • 8 oz Orzo Pasta

The vinaigrette

  • ¼ cup Olive Oil, extra virgin
  • ½ cup White Balsamic Vinegar
  • 1 clove Garlic, pressed
  • 1 teaspoon Honey
  • pinch Kosher Salt
  • pinch Black Pepper

The salad

  • 1 8 oz Container of Mozzarella Fresca Pearls
  • 1 Cup Grape Tomatoes
  • 8 Fresh Basil Leaves
  • ¼ small Red Onion, minced (optional)

Instructions

  1. Cook the orzo according to package directions until al dente, then drain and rinse with cold water.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, garlic, honey, salt, and pepper to make the vinaigrette.
  3. Combine the cooked orzo with tomatoes, basil, and mozzarella, then pour the vinaigrette over the mixture and mix well.
  4. Cover and chill the salad for 1-2 hours, mixing occasionally.
