Caprese Pasta Salad

Ingredients

The pasta

  • 6 ounces whole grain fusilli or rotini pasta

The sauce

  • cup extra-virgin olive oil
  • 2 pints cherry or grape tomatoes
  • ½ teaspoon fine sea salt
  • 2 to 3 teaspoons white balsamic vinegar or regular balsamic vinegar

The toppings

  • 8 ounces mozzarella pearls or one mozzarella ball, torn into bite-sized pieces
  • 2+ tablespoons fresh basil, chopped

Instructions

  1. 1. Boil salted water and cook the pasta until al dente, then drain.
  2. 2. In a skillet, heat olive oil, tomatoes, and salt over medium heat until tomatoes start to burst.
  3. 3. Remove from heat and stir in the cooked pasta, letting it cool slightly.
  4. 4. Add mozzarella and basil to the pasta, then stir in vinegar and adjust seasoning.
  5. 5. Let the salad rest for about 20 minutes before serving.
