Easy Lemon Chicken

Ingredients

The paste

  • 1 lemon juice and zest
  • 1 tbsp avocado oil
  • 2 tsp dried sage
  • 1 tsp lemon pepper seasoning
  • 1 tsp ground pepper
  • 1 tsp garlic powder

The rest

  • 2 tbsp avocado oil, divided
  • 4 pieces boneless chicken breasts
  • ¾ lb brussels sprouts, trimmed and halved
  • 3 cups cauliflower florets
  • 1 tbsp Italian seasoning
  • a pinch sea salt

Instructions

  1. Preheat the oven to 400°F.
  2. Zest the lemon and prepare the brussels sprouts and cauliflower.
  3. Make a paste by mixing lemon juice, lemon zest, avocado oil, sage, lemon pepper seasoning, ground pepper, and garlic powder in a bowl.
  4. Rub the paste over both sides of the chicken breasts.
  5. Heat a large oven-safe skillet over medium heat and add 1 tbsp of oil.
  6. Sear the chicken for 5-6 minutes on one side, then flip and sear for another 5-6 minutes.
  7. Remove the chicken from heat.
  8. In a bowl, toss the brussels sprouts and cauliflower with the remaining oil, Italian seasoning, and sea salt.
  9. Place the veggies around the chicken in the skillet or transfer everything to a sheet pan if needed.
  10. Roast in the oven for 30 minutes or until the chicken is cooked through, stirring the veggies halfway through.
  11. Carefully remove from the oven and serve.
