Easy Lemon Chicken

Instructions
- Preheat the oven to 400°F.
- Zest the lemon and prepare the brussels sprouts and cauliflower.
- Make a paste by mixing lemon juice, lemon zest, avocado oil, sage, lemon pepper seasoning, ground pepper, and garlic powder in a bowl.
- Rub the paste over both sides of the chicken breasts.
- Heat a large oven-safe skillet over medium heat and add 1 tbsp of oil.
- Sear the chicken for 5-6 minutes on one side, then flip and sear for another 5-6 minutes.
- Remove the chicken from heat.
- In a bowl, toss the brussels sprouts and cauliflower with the remaining oil, Italian seasoning, and sea salt.
- Place the veggies around the chicken in the skillet or transfer everything to a sheet pan if needed.
- Roast in the oven for 30 minutes or until the chicken is cooked through, stirring the veggies halfway through.
- Carefully remove from the oven and serve.
