Baked Lemon Chicken

Ingredients

The chicken

  • 4 pieces boneless skinless chicken breasts

The sauce

  • 4 cloves garlic
  • 3 tablespoons melted butter
  • 2 tablespoons freshly-squeezed lemon juice
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon Kosher salt
  • ½ teaspoon freshly-cracked black pepper

Optional garnishes

  • to taste fresh lemon slices
  • to taste extra fresh thyme sprigs

Instructions

  1. Brine the chicken breasts in warm salt water for 15 minutes.
  2. Preheat the oven to 450°F.
  3. Mix garlic, melted butter, lemon juice, and thyme in a bowl.
  4. Pour the butter mixture into a baking dish and coat the chicken breasts with it.
  5. Season the chicken with salt and pepper.
  6. Bake for 5 minutes, then baste with the butter mixture and bake for another 5 minutes.
  7. Repeat the basting and bake for an additional 5-8 minutes until cooked through.
  8. Let the chicken rest for 5-10 minutes before serving.
