Creamy Lemon Thyme Chicken

Ingredients

The chicken

  • 4 pieces boneless skinless chicken breasts
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

The sauce

  • cups chicken broth
  • ¼ cup lemon juice
  • 1 tablespoon lemon zest
  • cup finely chopped onion
  • 2 cloves garlic, minced
  • teaspoons fresh thyme leaves
  • cup heavy cream
  • 3 tablespoons unsalted butter

Optional garnish

  • to taste lemon slices
  • to taste fresh thyme

Instructions

  1. Pound chicken breasts to even thickness and season with salt and pepper.
  2. Heat olive oil in a skillet and brown the chicken for 7-8 minutes, then cover and set aside.
  3. Preheat the oven to 375°F (190°C).
  4. In the same skillet, combine chicken broth, lemon juice, lemon zest, onion, garlic, and thyme. Bring to a boil and reduce for 10 minutes.
  5. Stir in cream and butter, simmer for 3-4 minutes until slightly thickened.
  6. Add the chicken back to the skillet and bake in the oven for about 10 minutes until fully cooked.
  7. Serve chicken with sauce on top and garnish as desired.
