Creamy Lemon Thyme Chicken

Instructions
- Pound chicken breasts to even thickness and season with salt and pepper.
- Heat olive oil in a skillet and brown the chicken for 7-8 minutes, then cover and set aside.
- Preheat the oven to 375°F (190°C).
- In the same skillet, combine chicken broth, lemon juice, lemon zest, onion, garlic, and thyme. Bring to a boil and reduce for 10 minutes.
- Stir in cream and butter, simmer for 3-4 minutes until slightly thickened.
- Add the chicken back to the skillet and bake in the oven for about 10 minutes until fully cooked.
- Serve chicken with sauce on top and garnish as desired.
