Ingredients

  • 1½ - 2 pound boneless chicken breast
  • 2 tablespoons olive or canola oil
  • ¾ teaspoon seasoning (creole seasoning recommended)
  • ½ medium onion, diced
  • 1 teaspoon minced garlic or ½ tablespoon garlic powder
  • ¼ cup tomato puree
  • 1 teaspoon thyme or Italian seasoning
  • ¼ cup milk
  • ¼ cup cream (heavy or whipping cream)
  • ½ - 1 cup broth or water
  • ½ teaspoon smoked paprika
  • ½ teaspoon white pepper or black pepper
  • 1-2 tablespoons chopped parsley
  • to taste salt
  • ½ - 1 Lemon freshly squeezed juice
  • to serve lemon slices or wedges

Instructions

  1. Rinse the chicken breast and season with creole seasoning and salt, then set aside.
  2. In a large saucepan or skillet, heat oil over medium heat until hot, then add the chicken and brown for about 3-5 minutes on each side.
  3. Remove the chicken and set aside, draining excess oil but leaving about 2 tablespoons.
  4. Add onions and minced garlic to the pan, stirring for about 5 minutes.
  5. Add cream, milk, tomato puree, paprika, white pepper, thyme, parsley, ½ cup broth, lemon juice, salt, and pepper to the pan.
  6. Bring the mixture to a boil and let it simmer for about 5-7 minutes.
  7. Return the chicken to the pan and adjust the sauce thickness and seasoning with additional water or broth as needed.
  8. Simmer for another 3-5 minutes until the chicken is fully cooked.
  9. Add lemon slices if desired, then remove from heat and serve warm.
