Instructions
- Make the marinade by whisking together olive oil, lemon juice, lemon zest, garlic, parsley, Italian seasoning, salt, and pepper in a large bowl.
- Add the chicken breasts to the marinade and turn to coat. Marinate in the refrigerator for at least 1 hour, up to 24 hours.
- For the stovetop method, heat olive oil in a cast iron skillet over medium heat. Sear the chicken breasts for 4-8 minutes per side until cooked through.
- For the oven method, preheat the oven to 450°F (232°C). Place the chicken in a baking dish and bake for 16-22 minutes until cooked through.
- Remove the chicken from the heat and let it rest for 5 minutes before serving. Garnish with parsley and lemon slices if desired.
