Ingredients

The chicken

  • 2 lbs split chicken breasts

The marinade

  • 2 small or 1 large lemon
  • cup olive oil
  • 6 cloves garlic
  • ¼ tsp salt
  • to taste freshly cracked pepper

Instructions

  1. Preheat the oven to 275ºF.
  2. Squeeze about 3 tablespoons of lemon juice from the lemons and slice the remainder.
  3. Mince two cloves of garlic and peel the remaining four.
  4. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper.
  5. Pat the chicken breasts dry and place them in a casserole dish.
  6. Pour the marinade over the chicken, ensuring it is fully covered.
  7. Add the remaining peeled garlic and lemon slices around the chicken.
  8. Cover the dish tightly with foil and roast in the oven for 90 minutes.
  9. After 90 minutes, increase the oven temperature to 425ºF, remove the foil, and baste the chicken.
  10. Roast for an additional 20 minutes until the skin is golden brown and crispy.
  11. Let the chicken rest for 5-10 minutes before slicing and serving with pan drippings.
