Ingredients

The marinade

  • ½ cup freshly squeezed lemon juice
  • ¼ cup olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme leaves

The chicken

  • 2 pounds boneless, skinless chicken breasts

Instructions

  1. Whisk together lemon juice, olive oil, salt, pepper, and thyme in a bowl.
  2. Place chicken in a plastic bag, pour in marinade, squeeze out air, and seal.
  3. Refrigerate the bag for at least 30 minutes or overnight.
  4. Preheat the grill over medium-high heat and oil the grates.
  5. Grill chicken over direct heat for 5 minutes on each side, turning once.
  6. Transfer chicken to indirect heat and cook until internal temperature reaches 165°F, about 5 to 10 minutes longer.
  7. Remove chicken, tent with foil for 10 minutes, then slice or serve whole.
