Lemon Herb Grilled Chicken

Ingredients

The Chicken

  • 2 lbs boneless, skinless chicken thighs

The Marinade

  • 2 Tbsp olive oil
  • Juice of 2 lemons lemon juice
  • 2 tsp lemon zest
  • 4 cloves garlic, minced
  • 2 Tbsp fresh thyme and fresh rosemary
  • to taste salt and black pepper

Instructions

  1. Make the marinade by whisking together olive oil, lemon juice, garlic, fresh herbs, salt, and pepper.
  2. Prepare the chicken by placing it in a shallow dish or a sealable plastic bag and pouring most of the marinade over it, reserving some for later.
  3. Marinate the chicken in the fridge for at least 30 minutes but no longer than 2 hours.
  4. Preheat the grill and brush it with oil to prevent sticking.
  5. Grill the chicken for 5 to 6 minutes on each side until cooked through, reaching an internal temperature of 165°F.
  6. Let the chicken rest for 5 minutes before serving.
