Greek Lemon Chicken

Ingredients

The marinade

  • cup olive oil
  • 1 Tbsp lemon zest
  • cup fresh lemon juice
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp dried thyme
  • ½ tsp dried rosemary, crushed
  • to taste salt and freshly ground black pepper

The chicken

  • 4 pieces boneless skinless chicken breast halves (6 oz each)
  • to taste chopped fresh parsley (for serving)

Instructions

  1. Pound thicker parts of the chicken to an even thickness.
  2. Whisk together the marinade ingredients in a bowl.
  3. Place chicken in a resealable bag and pour the marinade over it.
  4. Seal the bag, press out air, and rub the marinade over the chicken.
  5. Refrigerate and marinate for 2 to 5 hours, flipping the bag halfway if possible.
  6. Preheat the grill to medium-high heat.
  7. Brush the grill grates with olive oil.
  8. Grill the chicken for about 4 minutes on each side until cooked through.
  9. Let the chicken rest for 5 minutes, garnish with parsley, and serve.
