Ingredients

The chicken

  • pounds thin boneless skinless chicken breasts

The marinade

  • ½ cup olive oil
  • 1 lemon zest
  • ¼ cup lemon juice
  • 1 teaspoon honey
  • 1 tablespoon minced garlic
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Optional garnishes

  • as desired lemon wedges
  • as desired parsley sprigs

Instructions

  1. Combine the marinade ingredients in a resealable bag or mixing bowl.
  2. Add the chicken to the marinade and refrigerate for at least 30 minutes or up to 8 hours.
  3. Heat a grill or grill pan over medium-high heat.
  4. Grill the chicken for 7-8 minutes per side or until fully cooked.
  5. Let the chicken rest for 5 minutes, then sprinkle with parsley and serve with garnishes if desired.
