Grilled Greek Lemon Chicken Skewers

The skewers
Instructions
- Slice the chicken breasts into 1-inch chunks and place in a freezer bag.
- Zest one lemon and juice it along with one more lemon, then mix with minced garlic and oregano.
- Slowly drizzle in olive oil while whisking, then add salt and pepper.
- Pour the marinade into the bag with chicken and let it marinate for 30 minutes to 3 hours in the refrigerator.
- Prepare the grill by lightly oiling the grate and setting it to medium-high heat.
- Soak wooden skewers in water for 10 minutes if using, otherwise prepare metal skewers.
- Slice the remaining lemon into thin rounds and cut green onions into 1-inch lengths.
- Thread chicken, green onions, and lemon slices onto skewers in a repeating pattern.
- Discard any remaining marinade and grill the skewers, turning often, until cooked through, about 10-15 minutes.
