Ingredients

The chicken and marinade

  • 2 pieces boneless chicken breasts
  • 3 pieces lemons
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • ¼ cup olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground pepper

The skewers

  • 7-8 pieces green onions

Instructions

  1. Slice the chicken breasts into 1-inch chunks and place in a freezer bag.
  2. Zest one lemon and juice it along with one more lemon, then mix with minced garlic and oregano.
  3. Slowly drizzle in olive oil while whisking, then add salt and pepper.
  4. Pour the marinade into the bag with chicken and let it marinate for 30 minutes to 3 hours in the refrigerator.
  5. Prepare the grill by lightly oiling the grate and setting it to medium-high heat.
  6. Soak wooden skewers in water for 10 minutes if using, otherwise prepare metal skewers.
  7. Slice the remaining lemon into thin rounds and cut green onions into 1-inch lengths.
  8. Thread chicken, green onions, and lemon slices onto skewers in a repeating pattern.
  9. Discard any remaining marinade and grill the skewers, turning often, until cooked through, about 10-15 minutes.
