Ingredients

Yogurt-Hummus Sauce

  • cup Greek yogurt
  • cup hummus
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, finely minced
  • ½ teaspoon coarse kosher salt
  • ¼ teaspoon black pepper
  • ½ teaspoon ground cumin

Chicken and Marinade

  • 1 ½ to 2 pounds boneless skinless chicken breasts or chicken tenders
  • 4 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • ½ teaspoon coarse kosher salt
  • ¼ teaspoon black pepper
  • 12 leaves romaine, Boston or Bibb lettuce (optional)
  • 1 set Bamboo or metal skewers

Instructions

  1. Preheat the grill to medium-high.
  2. Combine all sauce ingredients in a bowl and whisk until smooth, adding hot water if needed to thin.
  3. Slice chicken breasts lengthwise into thin strips or leave tenders whole.
  4. In a small bowl, whisk together lemon juice, olive oil, cumin, salt, and pepper for the marinade.
  5. Toss the chicken in the marinade, then thread onto skewers.
  6. Grill the chicken for 3-4 minutes per side until cooked through.
  7. Let the chicken rest for 5 minutes before serving, optionally on lettuce leaves, drizzled with sauce.
