Ingredients

The marinade

  • 1 cup plain yogurt
  • 1 unit lemon (zest and juice)
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)

  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon red pepper (cayenne)

The chicken

  • pounds boneless, skinless chicken thighs (or breasts)

For serving

  • as needed unit whole-wheat pitas
  • as needed unit lettuce
  • as needed unit hummus

Instructions

  1. Mix the marinade ingredients together.
  2. Submerge the chicken in the marinade and refrigerate for at least 2 hours or overnight.
  3. Preheat the grill to medium-high and oil the grates.
  4. Grill the chicken for 7 to 10 minutes on each side until fully cooked.
  5. Slice the chicken and serve with warm whole-wheat pitas, lettuce, and hummus.
