Yogurt Marinated Chicken

Ingredients

The marinade

  • cup whole milk Greek yogurt
  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1 tsp lemon zest
  • 1 Tbsp minced garlic
  • 1 Tbsp peeled and minced fresh ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • ¼ tsp cayenne pepper
  • ¼ tsp cinnamon
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • ¼ cup chopped cilantro

The chicken

  • lbs boneless skinless chicken thighs

Instructions

  1. Whisk together the marinade ingredients in a mixing bowl.
  2. Place the chicken in a resealable bag and pour the marinade over it.
  3. Seal the bag, press out excess air, and rub the marinade over the chicken.
  4. Refrigerate for at least 2 hours, up to 8 hours for breasts and 24 hours for thighs.
  5. Preheat the grill to 425 degrees and clean the grates.
  6. Grill the chicken for about 5 to 7 minutes per side until cooked through.
