Greek Marinated Chicken

Ingredients

The marinade

  • 1 cup plain yogurt
  • 2 Tbsp olive oil
  • 4 cloves garlic, minced
  • ½ Tbsp dried oregano
  • 1 medium lemon
  • ½ tsp salt
  • to taste freshly cracked pepper
  • ¼ bunch fresh parsley

The chicken

  • 3.5 to 4 lbs chicken pieces

Instructions

  1. Combine yogurt, olive oil, minced garlic, oregano, salt, and pepper in a bowl.
  2. Zest the lemon and add the juice from half of it to the bowl, then stir until well combined.
  3. Chop the parsley and mix it into the marinade.
  4. Add chicken pieces to a gallon-sized zip-top bag with the marinade, remove air, and refrigerate for 30 minutes.
  5. Preheat the oven to 375°F or prepare the grill.
  6. If baking, place chicken in a casserole dish and bake for 45-60 minutes until golden brown.
