Ingredients

The chicken

  • 1 lb boneless skinless chicken breast
  • ½ lemon sliced

The marinade

  • ¼ cup olive oil
  • tablespoons white wine vinegar
  • 1 teaspoon minced garlic
  • ½ tablespoon honey
  • 1 tablespoon lemon juice
  • 1 teaspoon dijon mustard
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt

The tomato chutney

  • ½ pint cherry tomatoes, cut into fourths
  • ¼ red onion finely diced
  • 2 tablespoons feta crumbles
  • 2 tablespoons fresh chopped basil
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the marinade by mixing olive oil, vinegar, garlic, honey, lemon juice, mustard, oregano, and salt.
  2. Transfer the marinade to a large bag or container and add the chicken breast, ensuring it's fully submerged. Let it marinate for 30 minutes to 2 hours.
  3. Preheat the grill to 400ºF and spray the grates with nonstick cooking spray.
  4. Place the marinated chicken over direct heat and add a lemon slice on top of each breast. Close the grill and cook for 7 to 8 minutes.
  5. Remove the lemon, flip the chicken, and cook for another 7 to 8 minutes until the internal temperature reaches 165ºF.
  6. Let the chicken rest for 5-10 minutes.
  7. Prepare the tomato chutney by mixing together tomatoes, red onion, feta, basil, and lemon juice.
  8. Serve the chicken topped with tomato chutney.
