Grilled Chicken Thighs with Garlic and Herbs

Ingredients

The chicken

  • 2 lbs boneless skinless chicken thighs

The marinade

  • 6 Tbsp olive oil
  • 3 Tbsp fresh lemon juice
  • ½ cup chopped fresh basil
  • ½ cup chopped fresh parsley
  • 1 Tbsp minced fresh oregano
  • 1 Tbsp minced fresh rosemary
  • 2 tsp minced fresh thyme
  • 1 Tbsp minced garlic
  • to taste salt
  • to taste black pepper

Instructions

  1. Whisk together olive oil, lemon juice, basil, parsley, oregano, rosemary, thyme, and garlic in a bowl, seasoning with salt and pepper.
  2. Place chicken in a resealable bag and pour the marinade over it, sealing the bag while pressing out excess air.
  3. Rub the marinade over the chicken and refrigerate for 1 to 8 hours.
  4. Preheat the grill to medium-high heat, about 425 degrees.
  5. Grill the chicken for about 5 minutes per side until the internal temperature reaches 165 degrees.
  6. Let the chicken rest for a few minutes before serving, garnishing with additional fresh herbs if desired.
