Grilled Chicken Thighs

Ingredients

The chicken

  • 2 pounds boneless, skinless chicken thighs

The marinade

  • 1 batch marinade (Chicken Thigh Marinade or Chicken Marinade)

For grilling

  • to taste oil
  • optional chopped fresh herbs
  • a squeeze lemon or lime juice

Instructions

  1. Marinate the chicken in a ziptop bag for at least 30 minutes or up to 12 hours.
  2. Preheat the grill to medium-high (375 to 400°F) and oil the grates.
  3. Place the chicken thighs on the grill, presentation side down, and cook for 4 to 5 minutes.
  4. Flip the chicken and continue cooking for another 4 to 6 minutes until cooked through.
  5. Remove the chicken from the grill and let it rest for at least 5 minutes before serving.
  6. Finish with herbs and a squeeze of lemon or lime juice if desired.
