Ingredients

The Chicken

  • 1.5 lbs boneless skinless chicken thighs
  • ½ teaspoon salt
  • ½ teaspoon ground pepper

The Marinade

  • 2 teaspoons apple cider vinegar
  • 1.5 tablespoons dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons soy sauce
  • ½ cup honey
  • ¼ cup olive oil
  • 3 cloves garlic, peeled and minced
  • ¼ medium white onion, thinly sliced
  • 2 teaspoons fresh chives, minced

Instructions

  1. Pat the chicken thighs dry with a paper towel and season with salt and pepper.
  2. In a bowl, whisk together the apple cider vinegar, dijon mustard, whole grain mustard, lemon juice, soy sauce, and honey.
  3. Slowly drizzle in the olive oil while whisking until well combined, then mix in the garlic, white onion, and chives.
  4. Set aside about ¼ cup of the marinade for glazing later, then pour the rest over the chicken in a bag or dish and coat well.
  5. Marinate the chicken for at least 30 minutes or up to 2 hours.
  6. Let the chicken sit at room temperature for 10 minutes before cooking.
  7. Preheat the grill to 400ºF and oil the grates.
  8. Grill the chicken thighs for 4-5 minutes on each side until they reach an internal temperature of 160ºF.
  9. Brush the chicken with the reserved marinade about 1 minute before removing from the grill.
  10. Let the chicken rest for 10 minutes before serving.
