Instructions
- Pat the chicken thighs dry with a paper towel and season with salt and pepper.
- In a bowl, whisk together the apple cider vinegar, dijon mustard, whole grain mustard, lemon juice, soy sauce, and honey.
- Slowly drizzle in the olive oil while whisking until well combined, then mix in the garlic, white onion, and chives.
- Set aside about ¼ cup of the marinade for glazing later, then pour the rest over the chicken in a bag or dish and coat well.
- Marinate the chicken for at least 30 minutes or up to 2 hours.
- Let the chicken sit at room temperature for 10 minutes before cooking.
- Preheat the grill to 400ºF and oil the grates.
- Grill the chicken thighs for 4-5 minutes on each side until they reach an internal temperature of 160ºF.
- Brush the chicken with the reserved marinade about 1 minute before removing from the grill.
- Let the chicken rest for 10 minutes before serving.
