Grilled Chicken Thighs

Ingredients

  • 2 lb. bone-in chicken thighs
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground coriander
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice

Instructions

  1. Mix garlic powder, cumin, smoked paprika, coriander, salt, pepper, olive oil, and lime juice in a small bowl.
  2. Pour the spice mixture over the chicken thighs in a medium bowl and toss to coat. Marinate for at least 15 minutes.
  3. Preheat the grill to medium-high heat (350°F-375°F).
  4. Place chicken thighs on the grill, skin side down, and grill for 4 minutes. Flip and grill for another 4 minutes.
  5. Move the chicken to indirect heat (around 300°F) and grill for an additional 3-5 minutes.
  6. Check that the internal temperature reaches 165°F, then remove from the grill and let rest for 5 minutes before serving.
