Juicy Grilled Chicken Thighs

Ingredients

The chicken

  • lbs bone in chicken thighs

The marinade

  • tablespoons homemade dry rub
  • ½ tablespoon liquid smoke
  • 1 tablespoon olive oil

Instructions

  1. Score the bottom part of the chicken thighs with slits to help the marinade penetrate.
  2. Marinate the chicken thighs with the dry rub and liquid smoke, mixing thoroughly.
  3. Grill the chicken thighs over direct heat at 300°F, starting with the skin side down for about 2 minutes on each side.
  4. Turn the chicken a couple of times to prevent burning and baste with olive oil while grilling.
  5. Move the chicken to the side of the grill without direct heat and cover the grill.
  6. Continue to barbecue for about 6-8 minutes until the internal temperature reaches 165°F.
  7. Serve hot with your favorite hot sauce.
