Instructions
- Allow chicken thighs to warm up while preparing the smoker or grill.
- Preheat the smoker or pellet grill to 225° Fahrenheit.
- Combine all chicken dry rub ingredients in a small bowl.
- Drizzle chicken thighs with oil and coat both sides.
- Season the thighs with the dry rub, ensuring they are completely coated.
- Place the chicken on the grill or smoker and smoke for 1 to 1.5 hours until the internal temperature reaches 165°.
- Increase grill temperature to 450°, flip the thighs, and cook for an additional 15-30 minutes, flipping every 3-4 minutes.
- If desired, brush BBQ sauce on the chicken during the last few minutes of cooking.
- Remove the chicken when the internal temperature reaches 180°-190° and let it rest for 5-10 minutes before serving.
