Ingredients

The chicken

  • 2 lbs bone-in skin on chicken thighs

The oil

  • 2 tbsp avocado oil

The chicken dry rub

  • ½ tsp sea salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ¼ tsp thyme
  • ¼ tsp oregano

Optional

  • to taste BBQ Sauce

Instructions

  1. Allow chicken thighs to warm up while preparing the smoker or grill.
  2. Preheat the smoker or pellet grill to 225° Fahrenheit.
  3. Combine all chicken dry rub ingredients in a small bowl.
  4. Drizzle chicken thighs with oil and coat both sides.
  5. Season the thighs with the dry rub, ensuring they are completely coated.
  6. Place the chicken on the grill or smoker and smoke for 1 to 1.5 hours until the internal temperature reaches 165°.
  7. Increase grill temperature to 450°, flip the thighs, and cook for an additional 15-30 minutes, flipping every 3-4 minutes.
  8. If desired, brush BBQ sauce on the chicken during the last few minutes of cooking.
  9. Remove the chicken when the internal temperature reaches 180°-190° and let it rest for 5-10 minutes before serving.
