Ingredients

The chicken

  • 8 pieces bone-in chicken thighs

The rub

  • 2 tablespoons kosher salt
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons black pepper
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper (optional)

Optional

  • 1 cup barbecue sauce

Instructions

  1. Preheat the smoker to 250 degrees F and add wood chips.
  2. Mix the seasonings in a small bowl until fully combined.
  3. Pat the chicken thighs dry with paper towels.
  4. Generously rub the seasoning mixture over all sides of the chicken thighs.
  5. Let the seasoned chicken sit for 30 minutes to allow flavors to penetrate.
  6. Place the chicken in a shallow foil pan and put it in the smoker.
  7. Cook for 90 minutes or until the internal temperature reaches 165 degrees F.
  8. Optionally, slather with barbecue sauce before serving.
