Instructions
- Preheat the smoker to 250 degrees F and add wood chips.
- Mix the seasonings in a small bowl until fully combined.
- Pat the chicken thighs dry with paper towels.
- Generously rub the seasoning mixture over all sides of the chicken thighs.
- Let the seasoned chicken sit for 30 minutes to allow flavors to penetrate.
- Place the chicken in a shallow foil pan and put it in the smoker.
- Cook for 90 minutes or until the internal temperature reaches 165 degrees F.
- Optionally, slather with barbecue sauce before serving.
