Instructions
- Preheat the smoker to 250°F and add your favorite wood chips.
- Combine the dry rub seasonings in a small bowl.
- Pat the chicken leg quarters dry with paper towels.
- Generously apply the dry rub to all sides of the chicken.
- Let the seasoned chicken sit for 30 minutes to absorb the flavors.
- Place the chicken in a shallow foil pan and put it in the smoker.
- Smoke the chicken for 2.5 hours or until it reaches an internal temperature of 165°F.
- Optionally, slather the chicken with barbecue sauce before serving.
