Ingredients

The chicken

  • 4 pieces chicken leg quarters

The dry rub

  • 2 tablespoons kosher salt
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons black pepper
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper (optional)

Optional

  • 1 cup barbecue sauce

Instructions

  1. Preheat the smoker to 250°F and add your favorite wood chips.
  2. Combine the dry rub seasonings in a small bowl.
  3. Pat the chicken leg quarters dry with paper towels.
  4. Generously apply the dry rub to all sides of the chicken.
  5. Let the seasoned chicken sit for 30 minutes to absorb the flavors.
  6. Place the chicken in a shallow foil pan and put it in the smoker.
  7. Smoke the chicken for 2.5 hours or until it reaches an internal temperature of 165°F.
  8. Optionally, slather the chicken with barbecue sauce before serving.
