Instructions
- Dry the chicken leg quarters with a paper towel and remove any excess fat.
- Rub the chicken with olive oil and sprinkle the dry rub evenly over all surfaces.
- Let the chicken sit for 20 minutes to come to temperature.
- Preheat the grill to smoke mode for 10-15 minutes.
- Place the chicken skin side up and smoke for 1 hour.
- Increase the grill temperature to 350°F and cook for an additional 30-60 minutes until the internal temperature reaches 165°F.
