Instructions
- Prepare the chicken legs by removing them from packaging and placing them on a rack over a baking sheet.
- Refrigerate the chicken legs for a minimum of 3 hours or overnight to air-dry.
- Preheat the smoker to 250°F using your choice of wood.
- In a large bowl, mix the chicken legs with all the spices and drizzle with oil.
- Place the chicken legs directly on the smoker racks or on a wing chicken rack.
- Cover the smoker and cook the chicken legs for about 90 minutes, moving them around for even cooking.
- Check the internal temperature of the chicken, ensuring it reaches 165°F, which may take an additional 30 minutes.
- Once done, remove the chicken from the smoker and baste it with your desired barbecue sauce.
