Instructions
- Preheat the smoker to 225° Fahrenheit.
- Prepare the seasoning rub by mixing all seasoning ingredients in a small bowl.
- Drizzle the chicken legs with avocado oil and toss to coat.
- Sprinkle the seasoning mix over the chicken and toss to coat.
- Place the chicken on the smoker grill and smoke for 1 hour.
- Remove the chicken from the smoker and increase the heat to high (about 500°).
- Once the smoker is hot, return the chicken legs to sear on all sides for a couple of minutes each.
- Ensure the chicken reaches an internal temperature of at least 160°.
- Remove the chicken and let it rest for 5-10 minutes before serving.
