Ingredients

The chicken

  • 2 lbs chicken drumsticks
  • 2 tbsp avocado oil

The smoked chicken seasoning rub

  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp Italian seasoning
  • 1 tsp coconut sugar (optional)
  • 1 tsp onion powder
  • ½ tsp mustard powder
  • ½ tsp paprika

Instructions

  1. Preheat the smoker to 225° Fahrenheit.
  2. Prepare the seasoning rub by mixing all seasoning ingredients in a small bowl.
  3. Drizzle the chicken legs with avocado oil and toss to coat.
  4. Sprinkle the seasoning mix over the chicken and toss to coat.
  5. Place the chicken on the smoker grill and smoke for 1 hour.
  6. Remove the chicken from the smoker and increase the heat to high (about 500°).
  7. Once the smoker is hot, return the chicken legs to sear on all sides for a couple of minutes each.
  8. Ensure the chicken reaches an internal temperature of at least 160°.
  9. Remove the chicken and let it rest for 5-10 minutes before serving.
