Ingredients

The chicken

  • 12 pieces chicken legs

The dry rub

  • 2 tablespoons kosher salt
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons black pepper
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper

Optional ingredients

  • 1 cup barbecue sauce

Instructions

  1. Preheat the smoker to 250 degrees F and add your favorite wood chips.
  2. Combine the dry rub seasonings in a small bowl.
  3. Pat the chicken legs dry with paper towels.
  4. Generously apply the dry rub to all sides of the chicken legs.
  5. Let the seasoned chicken sit for 30 minutes to marinate and come to room temperature.
  6. Place the chicken legs in a shallow foil pan and put it on the smoker rack.
  7. Smoke the chicken legs for 90 minutes or until they reach an internal temperature of at least 165 degrees F.
  8. For crispier skin, sear the chicken in the oven at 450 degrees F for 10 minutes.
  9. Optionally, coat the chicken legs with barbecue sauce before serving.
