Instructions
- Preheat the smoker to 250 degrees F and add your favorite wood chips.
- Combine the dry rub seasonings in a small bowl.
- Pat the chicken legs dry with paper towels.
- Generously apply the dry rub to all sides of the chicken legs.
- Let the seasoned chicken sit for 30 minutes to marinate and come to room temperature.
- Place the chicken legs in a shallow foil pan and put it on the smoker rack.
- Smoke the chicken legs for 90 minutes or until they reach an internal temperature of at least 165 degrees F.
- For crispier skin, sear the chicken in the oven at 450 degrees F for 10 minutes.
- Optionally, coat the chicken legs with barbecue sauce before serving.
