Ingredients

The chicken

  • 4 pieces chicken leg quarters

The dry rub and seasoning

  • 3 teaspoons Dry Rub for Chicken or Pork
  • 1 tablespoon olive oil
  • to taste salt

The smoking materials

  • to taste smoker pellets (signature blend, apple wood or pecan)

Instructions

  1. Dry the chicken leg quarters with a paper towel and remove any excess fat.
  2. Rub the chicken with olive oil and sprinkle the dry rub evenly over all surfaces, letting it sit for 20 minutes.
  3. Preheat the grill to smoke and let it preheat for 10-15 minutes.
  4. Place the chicken skin side up on the grill and smoke for 1 hour.
  5. Increase the grill temperature to 350°F and cook for an additional 30-60 minutes until the internal temperature reaches 165°F.
