Instructions
- Prepare the marinade by mixing all marinade ingredients in a bowl until the honey dissolves.
- Season the chicken thighs with salt and pepper, massaging it under and over the skin.
- Place the chicken in a dish and pour the marinade over, ensuring the chicken is submerged. Refrigerate for at least 2 hours or overnight.
- Preheat the smoker to 275ºF when 30 minutes of marinating time remains.
- Remove the chicken from the marinade and place skin side up in the smoker.
- Smoke the chicken for 2-2.5 hours, flipping halfway through, until the internal temperature reaches 160-165ºF.
- Let the chicken rest for 5 minutes before serving.
