Ingredients

The chicken

  • 2 lbs bone-in chicken thighs

The marinade

  • ¼ cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • ¼ cup lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon minced garlic
  • teaspoon red pepper flakes
  • ¾ teaspoon salt
  • ¾ teaspoon black pepper

Instructions

  1. Prepare the marinade by mixing all marinade ingredients in a bowl until the honey dissolves.
  2. Season the chicken thighs with salt and pepper, massaging it under and over the skin.
  3. Place the chicken in a dish and pour the marinade over, ensuring the chicken is submerged. Refrigerate for at least 2 hours or overnight.
  4. Preheat the smoker to 275ºF when 30 minutes of marinating time remains.
  5. Remove the chicken from the marinade and place skin side up in the smoker.
  6. Smoke the chicken for 2-2.5 hours, flipping halfway through, until the internal temperature reaches 160-165ºF.
  7. Let the chicken rest for 5 minutes before serving.
