Smoked Chicken Thighs

The chicken

The seasoning

wood chips (applewood, mesquite, or any of your choosing)

any spice rub of your choosing
Instructions
- Pat dry the chicken and season both sides with salt and pepper or a spice rub.
- If using an electric smoker, plug it in, add the wood chips, and smoke for 45 minutes to 1 hour, adding more chips if necessary.
- Finish cooking the chicken on a grill or in a 350°F oven until the internal temperature reaches 165°F.
- Let the chicken rest before slicing or shredding it for use in various dishes.
- For a less smoky flavor, smoke for only 15-25 minutes and then finish cooking.
