Ingredients

The chicken

  • lbs boneless, skinless chicken thighs

The seasoning

  • 1 teaspoon salt and pepper
  • ½ – 1 cup wood chips (applewood, mesquite, or any of your choosing)
  • optional any spice rub of your choosing

Instructions

  1. Pat dry the chicken and season both sides with salt and pepper or a spice rub.
  2. If using an electric smoker, plug it in, add the wood chips, and smoke for 45 minutes to 1 hour, adding more chips if necessary.
  3. Finish cooking the chicken on a grill or in a 350°F oven until the internal temperature reaches 165°F.
  4. Let the chicken rest before slicing or shredding it for use in various dishes.
  5. For a less smoky flavor, smoke for only 15-25 minutes and then finish cooking.
