Easy Chicken Thighs Marinade

Ingredients

The marinade

  • 2 teaspoons apple cider vinegar
  • tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons soy sauce
  • ½ cup honey
  • ¼ cup olive oil
  • 3 cloves garlic, peeled and minced
  • ¼ medium white onion, thinly sliced
  • 2 teaspoons fresh chives, minced

The chicken

  • lbs. boneless skinless chicken thighs
  • ½ teaspoon salt
  • ½ teaspoon ground pepper

Instructions

  1. Pat the chicken thighs dry with a paper towel and season with salt and pepper.
  2. In a bowl, whisk together the apple cider vinegar, Dijon mustard, whole grain mustard, lemon juice, soy sauce, and honey.
  3. While whisking, drizzle in the olive oil until well combined, then add garlic, onion, and chives.
  4. Set aside ¼ cup of the marinade for glazing later.
  5. Coat the chicken thighs in the marinade and let them marinate for at least 30 minutes or up to 2 hours.
  6. Remove the chicken from the refrigerator and let it sit at room temperature for 10 minutes before cooking.
  7. Cook the chicken using your preferred method, either grilling or baking.
  8. Let the chicken rest for 10 minutes before serving.
