Ingredients

The marinade

  • ½ cup olive oil
  • 2 tablespoons brown sugar
  • 3 tablespoons soy sauce
  • 1 ½ teaspoons lemon zest
  • 1 tablespoon fresh parsley leaves, chopped
  • 1 tablespoon fresh thyme leaves, chopped
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoons minced garlic

The chicken

  • 2 pounds chicken thighs

Instructions

  1. Whisk together all marinade ingredients in a large bowl until well combined.
  2. Add the chicken thighs to the bowl and spoon the marinade over them.
  3. Cover and refrigerate for at least 1 hour or up to 24 hours.
  4. Remove the chicken from the marinade and cook as desired.
