Ingredients

The chicken

  • 3 pieces boneless skinless chicken breasts

The seasoning

  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

The garnish

  • 2 pieces lemons, halved

Instructions

  1. Prepare the grill with one side for direct cooking at medium-high heat and the other for low, indirect heat.
  2. Brush the cooking grates clean.
  3. Drizzle the chicken breasts with olive oil and rub it over them, then season with salt and pepper.
  4. Place the chicken on the hot grill and cover, cooking for 4-5 minutes until it releases easily from the grates.
  5. Flip the chicken and cook for another 4-5 minutes.
  6. Move the chicken to the indirect heat and cook for an additional 5-8 minutes until firm and opaque, reaching an internal temperature of 160°F.
  7. Add the lemon halves to the grill cut side down halfway through cooking the chicken, cooking for 3-5 minutes.
  8. Transfer the chicken to a plate, cover with aluminum foil, and let it rest for 5 minutes before serving.
