Ingredients

The chicken

  • 4 pieces boneless skinless chicken breasts (8 oz. each)

The marinade

  • ¼ cup olive oil
  • ¼ cup low-sodium chicken broth
  • 1 Tbsp minced garlic
  • 1 tsp honey
  • 1 tsp dried thyme
  • tsp salt
  • ½ tsp black pepper

Instructions

  1. Pound the chicken to even out its thickness.
  2. Transfer chicken to a resealable bag.
  3. Whisk together olive oil, chicken broth, garlic, honey, thyme, salt, and pepper in a bowl.
  4. Pour the marinade over the chicken in the bag, seal, and rub to coat.
  5. Refrigerate for 2 to 12 hours.
  6. Preheat the grill to medium-high heat (425°F).
  7. Grill the chicken covered for about 5 to 6 minutes per side until the internal temperature reaches 160 to 165°F.
  8. Let the chicken rest for 5 minutes before serving.
