Lemon Chicken with Lemon Butter Sauce

Instructions
- 1. Pat the chicken dry and season with salt and pepper.
- 2. Heat a skillet over medium-high heat, add avocado oil, and cook the chicken for 5-6 minutes per side until it reaches 165°F. Remove and let rest.
- 3. In the same skillet, melt 2 tablespoons of butter and sauté shallots and garlic for 2-3 minutes.
- 4. Add flour and whisk until slightly browned, about 1 minute.
- 5. Slowly pour in chicken broth while whisking until lumps are gone.
- 6. Let the sauce simmer for 1-2 minutes, then add lemon juice, lemon zest, thyme, red pepper flakes, salt, pepper, and remaining butter. Simmer for an additional 3-4 minutes.
- 7. Return the chicken to the skillet and cook for 1 minute.
- 8. Serve garnished with lemon slices and chopped parsley.
