Lemon Chicken with Lemon Butter Sauce

Ingredients

The chicken

  • 1 tablespoon avocado oil
  • 4 pieces boneless skinless chicken breast
  • to taste salt
  • to taste pepper

The lemon butter sauce

  • 4 tablespoons butter
  • 1 piece shallot, diced
  • 3 cloves garlic, minced
  • 3 tablespoons flour
  • 1 cup chicken broth
  • cup lemon juice
  • ½ tablespoon lemon zest
  • 1 tablespoon fresh thyme
  • ¼ teaspoon red pepper flakes
  • ¼–½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. 1. Pat the chicken dry and season with salt and pepper.
  2. 2. Heat a skillet over medium-high heat, add avocado oil, and cook the chicken for 5-6 minutes per side until it reaches 165°F. Remove and let rest.
  3. 3. In the same skillet, melt 2 tablespoons of butter and sauté shallots and garlic for 2-3 minutes.
  4. 4. Add flour and whisk until slightly browned, about 1 minute.
  5. 5. Slowly pour in chicken broth while whisking until lumps are gone.
  6. 6. Let the sauce simmer for 1-2 minutes, then add lemon juice, lemon zest, thyme, red pepper flakes, salt, pepper, and remaining butter. Simmer for an additional 3-4 minutes.
  7. 7. Return the chicken to the skillet and cook for 1 minute.
  8. 8. Serve garnished with lemon slices and chopped parsley.
