Lemon Butter Chicken

Ingredients

The chicken

  • lbs boneless and skinless chicken thighs
  • to taste none salt
  • to taste none ground black pepper

The sauce

  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup heavy whipping cream
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon Japanese mirin (optional)

The vegetables

  • 2 small tomatoes, cut into wedges
  • 2 cups spinach
  • 1 tablespoon chopped parsley

Instructions

  1. Season the chicken with salt and pepper on both sides.
  2. Heat a skillet with 1 tablespoon of butter and pan-sear the chicken until browned.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the remaining butter and sauté the garlic until aromatic.
  5. Add chicken broth and heavy whipping cream, then bring to a simmer.
  6. Return the chicken to the skillet and add Parmesan cheese, lemon juice, mirin (if using), and salt.
  7. Add tomatoes, spinach, and parsley, and cook until the spinach wilts.
  8. Serve immediately.
