Lemon Butter Chicken

Instructions
- Season the chicken with salt and pepper on both sides.
- Heat a skillet with 1 tablespoon of butter and pan-sear the chicken until browned.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining butter and sauté the garlic until aromatic.
- Add chicken broth and heavy whipping cream, then bring to a simmer.
- Return the chicken to the skillet and add Parmesan cheese, lemon juice, mirin (if using), and salt.
- Add tomatoes, spinach, and parsley, and cook until the spinach wilts.
- Serve immediately.
