Instructions
- Grease and flour two 8-inch cake pans and line with parchment paper.
- Preheat the oven to 350°F (180°C).
- Mix apple cider vinegar and soy milk in a bowl and let it curdle.
- In a large bowl, whisk together sugar, flour, baking soda, and salt.
- Add the milk mixture, melted butter, and vanilla to the dry ingredients and mix until combined.
- Divide the batter into the prepared cake pans and bake for 40 minutes.
- Allow the cakes to cool completely in the pans.
- For the frosting, beat the vegan butter and vanilla until fluffy.
- Gradually add powdered sugar and vegan milk until desired consistency is reached.
- Frost the first cooled cake layer, then place the second layer on top and frost the entire cake.
- Decorate as desired and serve.
