Ingredients

The Cake

  • 2 tablespoons apple cider vinegar
  • 2 cups soy milk
  • 2 cups brown sugar
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon sea salt
  • cup vegan butter
  • 1 tablespoon vanilla extract

The Buttercream Frosting

  • 3-3½ cups powdered sugar
  • 1 cup vegan butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon vegan milk
  • ¼ teaspoon sea salt

Instructions

  1. Grease and flour two 8-inch cake pans and line with parchment paper.
  2. Preheat the oven to 350°F (180°C).
  3. Mix apple cider vinegar and soy milk in a bowl and let it curdle.
  4. In a large bowl, whisk together sugar, flour, baking soda, and salt.
  5. Add the milk mixture, melted butter, and vanilla to the dry ingredients and mix until combined.
  6. Divide the batter into the prepared cake pans and bake for 40 minutes.
  7. Allow the cakes to cool completely in the pans.
  8. For the frosting, beat the vegan butter and vanilla until fluffy.
  9. Gradually add powdered sugar and vegan milk until desired consistency is reached.
  10. Frost the first cooled cake layer, then place the second layer on top and frost the entire cake.
  11. Decorate as desired and serve.
