Instructions
- Preheat the oven to 350°F (180°C) and prepare a 9x13 sheet pan.
- Combine apple cider vinegar and soy milk in a bowl and set aside to curdle.
- In a large bowl, whisk together sugar, flour, baking soda, and salt.
- Add the milk mixture, melted butter, and vanilla to the dry ingredients and mix until just combined.
- Pour the batter into the prepared pan and tap lightly to remove air bubbles.
- Bake for 33 to 35 minutes until fully baked, then let cool completely in the pan.
- For the frosting, beat the softened vegan butter and vanilla until fluffy.
- Gradually add powdered sugar, mixing until fully incorporated, then adjust with vegan milk for desired consistency.
- Frost the cooled cake and decorate as desired.
