Ingredients

The Cake

  • 2 tablespoons apple cider vinegar
  • 2 cups soy milk or other vegan milk
  • 2 cups brown sugar or cane sugar
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon sea salt
  • cup vegan butter, melted and cooled
  • 1 tablespoon vanilla extract

The Frosting

  • 3-3 ½ cups powdered sugar
  • 1 cup vegan butter, softened
  • 1 teaspoon vanilla extract
  • 1 tablespoon vegan milk
  • ¼ teaspoon sea salt

Instructions

  1. Preheat the oven to 350°F (180°C) and prepare a 9x13 sheet pan.
  2. Combine apple cider vinegar and soy milk in a bowl and set aside to curdle.
  3. In a large bowl, whisk together sugar, flour, baking soda, and salt.
  4. Add the milk mixture, melted butter, and vanilla to the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared pan and tap lightly to remove air bubbles.
  6. Bake for 33 to 35 minutes until fully baked, then let cool completely in the pan.
  7. For the frosting, beat the softened vegan butter and vanilla until fluffy.
  8. Gradually add powdered sugar, mixing until fully incorporated, then adjust with vegan milk for desired consistency.
  9. Frost the cooled cake and decorate as desired.
