Ingredients

The base

  • 1 can full-fat coconut milk
  • 8 oz fresh spinach
  • 1 large tomato
  • ¼ cup water

The aromatics

  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 Tbsp grated fresh ginger

The spices

  • 2 tsp ground cumin
  • 1 tsp garam masala
  • ½ tsp turmeric
  • ¼ tsp cayenne pepper
  • ¾ tsp salt

The cooking fat

  • 2 Tbsp olive oil

Instructions

  1. Heat coconut milk and spinach in a pot until spinach wilts.
  2. Blend the coconut milk and spinach until desired consistency.
  3. Sauté diced onion, minced garlic, and grated ginger in olive oil until soft.
  4. Add cumin, garam masala, turmeric, and cayenne to the skillet and cook for 2 minutes.
  5. Add diced tomato and water, cooking until the tomato breaks down.
  6. Combine the spinach mixture with the skillet ingredients and heat through.
  7. Adjust salt to taste and serve hot.
