Instructions
- Heat coconut milk and spinach in a pot until spinach wilts.
- Blend the coconut milk and spinach until desired consistency.
- Sauté diced onion, minced garlic, and grated ginger in olive oil until soft.
- Add cumin, garam masala, turmeric, and cayenne to the skillet and cook for 2 minutes.
- Add diced tomato and water, cooking until the tomato breaks down.
- Combine the spinach mixture with the skillet ingredients and heat through.
- Adjust salt to taste and serve hot.
