  • 3 heirloom tomatoes

  • 2 garlic cloves
  • fancy ones anchovies or sardines
  • for topping sprouts
  • 1 loaf good loaf of bread (e.g., rye seeded loaf)

Instructions

  1. Grate the tomatoes into a medium bowl and season with salt and pepper.
  2. Grill the bread until charred on the edges.
  3. Rub the surface of the grilled bread with the garlic cloves.
  4. Top the bread with a spoonful of the tomato mixture, allowing excess liquid to drain off.
  5. Garnish with half of an anchovy or sardine, a few sprouts, and a drizzle of olive oil.
